Ingredients for chicken kabsa in the oven


Whole chicken, cut into 8 parts

A cup of basmati rice

2 tablespoons of oil

2 bay leaves

Chicken broth cube

6 cardamom

1 onion, chopped

2 garlic cloves, crushed

5 cloves

2 cinnamon sticks

2 black lemons

1 teaspoon cumin

A small spoon of dry coriander

Salt and Pepper

1 teaspoon ginger powder

1 teaspoon cardamom powder

420g tomato juice

A quantity of raisins and roasted almonds to garnish


How to prepare chicken kabsa in the oven


Soak the rice for 15 minutes, then strain it well.

Put the onion and garlic in a medium saucepan over a high heat, stir until golden, then add bay leaf, cardamom, cinnamon, cloves, black lemon, cumin, coriander, salt, pepper, ginger and cardamom powder. My heart well and leave them for 30 seconds.

Add the tomato juice and stock cube and stir until the mixture thickens and reduce the heat.

Add the chicken and leave it for a minute.

Meanwhile, open the oven grill and place the chicken on a tray and put it under the oven grill for 5 minutes until it is browned.

Place the rice in a serving dish and on top of the chicken, garnish with raisins and almonds.
