Detox Soup Ingredients:
2 boneless, skinless chicken breasts (about 12 pounds)
3 stems of lemon grass, crushed
1 piece of ginger (4 inches) fresh, peeled and sliced
1 carrot, cut into large chunks
1 celery stalk, cut into large chunks
1 shallot, peeled and halved
1 bay leaf
½ teaspoon black pepper
1 dried Thai chili pepper
Kosher salt
1 package (5-ounce) baby spinach leaves, roughly chopped
How to make detox soup:
1. Add chicken, lemon grass, ginger, carrots, celery, leeks, bay leaf, black pepper, hot Thai pepper and a teaspoon of salt to a large oven skillet or soup pot. Add 6 cups of cold water to a skillet, then place over medium heat.
2- Heat the soup and remove any small residue floating on the surface, reduce the heat to a low temperature.
3- Cover the pot and cook for 45 minutes or until the chicken is done. Turn off the heat and leave the soup to cool for 30 minutes.
4- Take the chicken out of the soup and slice it, get rid of the bones and skin. Drain the soup, discard the solids, then return the liquid to the saucepan - the skillet.
5. Add chicken to the soup, along with spinach, then heat the soup over medium-high heat.
6. Serve it immediately.
