Ingredients of the Moroccan Harira method:
- ¼ kilo lamb, cut into small cubes
- 125 g lentils
- 125g chickpeas soaked for 12 hours and remove the peel
- ½ cup celery, chopped
- ½ cup chopped parsley
- ½ cup chopped green coriander
- 2 medium onions, chopped
- ½ kilo tomatoes, chopped in an electric mixer
- 125 g of very fine vermicelli
- 125 g of white flour, mix in an electric mixer with a cup of water
- ¼ cup of oil
- 4 liters of water
- 1 teaspoon margarine
- 1 teaspoon ginger
- 1 teaspoon black pepper
- ½ 1 teaspoon cinnamon
- 4 tablespoons tomato sauce
- 1 tablespoon of salt
How to make Moroccan Harira :
1- Bring a large saucepan and place it over the stove and put the oil in it, then add the meat, onion, parsley, coriander, and celery.
Black pepper, ginger, cinnamon and salt, stirring for 5 minutes.
2- Add the chopped tomatoes, add the chickpeas, lentils, ghee and tomato paste, then put the water and close the saucepan for an hour.
3- Remove the cover and leave it on low heat.
4- Add the vermicelli and flour and stir well, then leave it on the fire for another 30 minutes with constant stirring on a low heat. Serve
