Ingredients of eggplant tagine with chickpeas:
- 2-3 diced eggplant
- 4 tablespoon oil
- 3 minced garlic clove
- 2 chopped onions
- ½ 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- ½ 1 teaspoon chopped coriander
- 1 can of tomato paste + tomato juice
- 1 cup boiled chickpeas
- Salt and pepper For garnishing:
- 2 tablespoons of oil,
- 1 sliced onion,
- 1 minced garlic clove
How to make eggplant casserole with chickpeas:
1- Put the eggplant in a colander.
2- Sprinkle it with salt and leave it for half an hour.
3. After half an hour, rinse it with cold water and dry it.
4. In a bowl, heat the oil.
5. Add the onion, garlic, and spices, and mix.
6- Add the eggplant, and saute it over medium heat for 10 minutes.
7. Add tomatoes and chickpeas.
8. Season the mixture with salt and pepper to your liking.
9- Cover the bowl and leave it on the stove until fully cooked (about 25 minutes).
10. Meanwhile, in a non-stick frying pan, heat the icing oil.
11- Add the onions and garlic, and stir until they turn golden.
12- Lift them from the fire and line them on paper towels.
13. When serving, stack the eggplant in a serving dish.
14. Serve with toast or white rice.
15. Decorate the face with onions and garlic that you have roasted.
16. You can also sprinkle chopped coriander on top.
