Ingredients of the method of making meatloaf with cheese and green quinoa:
- 1 cup quinoa
- 3 cups small spinach
- 1 cup fresh coriander leaves
- 1 large garlic clove
- 12 ounces ground beef
- 8 ounces ground turkey, 99% lean
- Cup "2% fat" milk
- 3 tablespoons of whole wheat bread crumbs
- 4 tsp Worcestershire sauce
- 1 teaspoon chili powder
- 1 large egg
- Kosher salt and freshly ground black pepper
- 4 teaspoons red vinegar
- 2 small plum tomatoes, cut into 12 slices
- 5 tablespoons grated cheddar cheese
- 12 small slices of watermelon (8 ounces), to serve
How to make meatloaf with cheese and green quinoa:
1- Preheat the oven to 400 degrees Fahrenheit, then line a baking sheet with parchment paper.
2. Wash the quinoa several times in a fine-mesh sieve, then strain it. Heat a medium pot of water to a boil.
3- Add quinoa and boil until soft, for 10 - 15 minutes. Dry the quinoa and then wash it under cold water, leave it aside after that to drain well and dry.
4. Meanwhile, mix the spinach, coriander, and garlic in a food processor and then blend them until the vegetables are sliced.
5. Transfer 1/3 of the mixture to a medium bowl with ground beef, turkey, milk, bread crumbs, 2 teaspoons of Worcestershire sauce, chili powder, an egg, half a teaspoon of salt, and some black pepper.
6- Mix the mixture with your hands well.
7. Mix the remaining two tablespoons of Worcestershire sauce with two teaspoons of vinegar. Divide the meat mixture into four sections on a 1-inch-thick NFL. Arrange the balls on the prepared baking tray.
8- Spread 3 slices of tomato on top of each ball, then sprinkle it with a little Worcestershire sauce with vinegar.
