Ingredients to make Mexican chicken stew:
- 4 tablespoons of olive oil
- 1 medium onion, roughly chopped
- 4 large garlic cloves, roughly chopped
- 2 jalapeno, seeds removed and sliced
- 1 tablespoon dried oregano
- 1 teaspoon dried cumin
- 1 package (28 ounce) chopped tomatoes
- 3 cups cooked chicken, thinly sliced
- Several sprinkles of Worcestershire sauce
- 3 - 4 cups chicken broth
- 1 lemon
- 1 cup cooked white rice
- Kosher salt
- Sour cream, for decoration
- Fresh coriander leaves, for garnishing
How to make Mexican chicken stew:
1- Heat the oil in a saucepan over medium heat. Add the onion and sauté for one to two minutes. Add garlic and jalapeno and cook until the garlic becomes translucent and softens the entire mixture. Add the spices and cook for 1-2 minutes until fragrant. Add tomatoes, chicken, Worcestershire sauce, and broth.
2. Leave the mixture to boil for 20 minutes.
3- Cut the lemon in half, then squeeze the lemons in a bowl.
4- Add the white rice and continue cooking for 5 minutes until the rice is hot, season the stew with salt to taste.
5. Spread the stew on plates, then decorate the face with sour cream and coriander.
