Ingredients for making blueberry pie ice cream popsicles:
- 1 can (14 ounce) full-fat coconut milk (refrigerated overnight)
- ½ Fresh blueberry cup with handful of ice cream popsicles
- 2-4 tablespoons maple syrup or other sweeteners
- ½ 1 teaspoon vanilla extract
- 1 teaspoon ground cardamom
How to make blueberry pie ice cream popsicles:
- Open the package of coconut milk, then pour the thick white cream into a blender. Add blueberry, maple syrup, vanilla and cardamom, then blend until smooth.
- Taste the mixture and add more sweeteners or spices, as you like. Pour a small amount of blueberry cream into the ice cream molds, add some fresh blueberry to each tray, and divide the remaining mixture between the popsicle molds.
- Add the wooden sticks to the molds, then put the molds in the freezer for 4-6 hours, until they freeze. Remove the pans by dipping them in hot water for a moment.
