Ingredients of the method of making caramelized pecans stuffed with blue cheese:
- 100 large chunks (about 6 ounces or 2 cups) pecan halves
- 2 tablespoons butter
- ¼ cup of honey
- ¼ cup of sugar
- A small pinch of salt, to taste
- ¼ 1 teaspoon freshly ground black pepper
- ⅛ 1 teaspoon cayenne pepper
- ⅛ 1 teaspoon garam masala (or you can replace it with curry or cumin powder)
- ½ 1 cup sour cream (about 2 oz.)
- 1 cup crumbled blue cheese (about 4 ounces), at room temperature to make it easier to blend
How to make caramelized pecans stuffed with blue cheese:
1- To prepare the caramelized pecan: spread the pecan in one layer on a baking tray with a silicone mat (or parchment paper). Bake the tray at 375 degrees for 10 minutes.
2. Watch the pecan while it is baking so that it does not burn.
3- Melt the butter and honey, preferably sweetened honey in a large saucepan over medium heat.
4- Add the pecans to the saucepan, then stir well until the mixture is completely covered. Allow the pot to cool completely.
5- Mix the sugar with salt, cayenne pepper, and garam masala in a large saucepan, remove the pecans using a slotted spoon, then add it to the sugar mixture, stir the pecans until the sugar covers completely.
6- To collect the bites: mix the blue cheese with the sour cream with an electric mixer until the consistency is creamy.
7. Using a small spoon (or a pastry decorating bag), stuff (or spread with a decorating bag) the creamy mixture on the flat side of one of the pecan halves.
8. Cover the stuffing with the other half of the pecan, flat side down.
9. Using a clean finger, pass it on all sides to smooth out the filling. Enter the pecan in the fridge until serving.
