Ingredients of the method of making hash brown with salmon:
- ¼ 1 cup plain nonfat yogurt
- 1 tablespoon mustard
- 2 tablespoons chopped fresh dill
- 2 tablespoons of extra virgin olive oil
- 3 cups frozen hash browns cubes
- Kosher salt and freshly ground pepper
- 1 red onion, thinly sliced
- 2 capsicum (red and/or green), chopped
- ¾ pound salmon fillet, cut into 3/4 inch pieces
- 8 cups small watercress leaves
- Sliced lemon wedges, to serve (optional)
How to make hash brown with salmon:
1- Mix yogurt, mustard, and dill in a small bowl.
2. Heat ½ tablespoon of olive oil in a large non-stick frying pan over medium-high heat. Add the hash brown, then sprinkle ¼ teaspoon each of salt and pepper, cook until browned, for 12 minutes. Transfer the mixture to a bowl.
3. Heat ½ spoonful of olive oil in a pan, then add the onion, capsicum, and a quarter teaspoon of salt. Cook the mixture until golden, for 8 minutes.
4- Add the salmon and cook, stirring occasionally, until soft, for 3 minutes. Return the hash brown to the skillet and stir, then remove from heat and mix with 3 tablespoons of the yogurt mixture. Season the hash brown with salt and pepper.
5- Add a tablespoon of water to the remaining yogurt mixture, then add watercress to it and mix them together in a medium bowl.
6. Serve hash brown salmon with a watercress salad and lemon slices, to your liking.
